What did I do wrong

I've been using dry yeast, mostly US-05, for some time now. I never re-hydrated before and I read that doing so would reduce lag time and result in a better batch of beer. I followed the instructions from the 'How to Brew' website just about to the letter, the only thing that I did different is that I used raw cane sugar to proof the yeast instead of DME or table sugar. I used 1tsp like the page said. I boiled water and poured it into a sanitized measuring cup, waited for it to cool down to about 95F, pitched the yeast, covered with saran rap, waited 15min, then added a small amount of water that I had boiled with 1 Tsp of raw cane sugar. 30min after proofing I only saw a very small amount of bubbles on the top.  read more »

Thirsty Monk Expansion Nearly Complete

I got a chance to look into the upstairs expansion of the Thirsty Monk, otherwise known as the Pinthouse. The bar is finished, and the kegs are getting cold, and the space looks great. On seasonable days, the windows in the front can be opened up, and they will also have some benches out front for sitting (but please save a spot for me, okay?) There is still some work to be done, but they are shooting for an opening date of July 3rd. I have a feeling I am going to spend a good amount of time during the holiday weekend here. Below is the tentative draft list for opening night:

Full Sail, conjuring up visions of rainbow-colored nylon sheets fluttering in the wind on a warm summer day carrying their boats and cargo effortlessly over blue waters.
In this case, the sail might be full but no one's manning the rudder. The boat is sailing dangerously close to the shallow sand bars on the Columbia River.
Wife Persimmon & I have visited this site three times over the past year. The view from their beer deck is amazing, full of wind-surfers, boats and the mighty river itself.  read more »
