Out and about on Friday I was quite happy to see this stubby at the LCBO, a cousin to the porter, imperial stout and IPA made by the Scotch Irish branch of Heritage Brewing. I was even more happy to see that it was a 3.7% ordinary bitter for $2.20 a bottle.
It pours a bright caramel-amber with a rich off-white head that resolves to a thick rim. In the mouth, there is a bit more of a carbonation zip than I would have thought an ordinary bitter might provide but it is relatively still compared to most ales you run into. The real pleasure in the beer is the amount of raisin-nutty grainy body that is packed into such a light brew. 95% of 5% beers in Canada would be thinner than this. Here's what I want to do. I am now making 10 gallon batches and want to use the original recipe and have half be original and the other half a coffee stout. Since I split the batch into two 5 gallon primaries and secondaries, what is the best way to make one a coffee stout? Should I add coffee to the secondary (seems like the beans would kill the head on the stout due to the oil), or should I do a mini mash of some dark grains and add this to one of the primaries? Any ideas and what grain would be the best if a mini mash would work. Thanks for your help.

About 10 years ago or so, I surprised my wife on our wedding anniversary with a weekend trip to a romantic Bed and Breakfast. Prior to our trip, I sold the idea to her by giving an historical account of the Inn's participation in the Revolutionary War. I mentioned to her how a wise General named Lafayette outsmarted the British with a brilliant maneuver that is still being studied in history books today. I told her that the Inn was originally constructed in 1732 and was also rumored to play a part in the Underground Railroad that helped to free the slaves. I even spoke of the possibility of the two of us running into three of the Inn's of ghosts that have been playing pranks there for generations. read more »
